The first time I made granola was from a recipe on The Kitchy Kitchen blog. It was fantastic. Crunchy, sweet, nutty and totally addictive. I tried to find the recipe again the other day but it must have gotten lost when The Kitchy Kitchen moved to it's new website. There was a new recipe on her site, so I gave it a shot but it wasn't successful.
Ash asked me to make a breakfast with peaches for our Rye Getaway so I decided to make a riff of a peaches and cream dessert. While on the online search for the best recipe, I came accross Veggieful, a super cute vegan food blog, and their recipe for peaches and cream granola. The granola looked so simple I made it as soon as I got home from work. Three ingredients? Yes please. This stuff is seriously dangerous. Like, "I have to make this for everyone I know" kinda territory.
Not just for breakfast, I think it's a fabulous three-thirty-itis snack or it could be great mixed in with a trail mix. I could even eat it watching a movie. It's so good people. So good.

Sticky Notes:
- I used Greek yoghurt instead of the vegan vanilla yoghurt used in the recipe, and canned peaches in place of fresh as they aren't in season at the moment
- Ash tried the same recipe but with honey instead of maple syrup and he said that it gave it a chewy texture
- I left my oven at 160 degrees celsius and cooked it a little bit longer instead because I was scared it might burn. You'll know it's done when the granola changes to a light brown colour
